16,000 cows produce 116 million litres of milk each year. All the farms are located within 50 kilometres of the dairy. A few minutes after the twice-daily milking, at the same time each day, the milk is refrigerated before being picked up by one of 8 Alsace Lait tanker trucks.

Producers
333 Alsatian farmers supply milk to Alsace Lait every day. They are more than mere suppliers, they are cooperative farmers that are involved in almost every aspect of the Alsace Lait company. As shareholders they care about raw material quality and client satisfaction. The cooperators all comply with the Charte des Bonnes pratiques d’Elevage or are awaiting certification. This demonstrates their commitment to a milk production quality assurance program. The Charte des Bonnes pratiques d’Elevage is a national standard defined for milk and meat production. Dairy farmers must implement an auto-evaluation system in 7 fields of application. This evaluation is then controlled by the Alsace Lait husbandry technicians who when necessary issue corrective actions to be implemented immediately.
 | | The Alsace Lait lorries criss-cross the northern Alsace countryside in every kind of weather. They maintain constant temperature and only travel short distances. Alsace Lait is the only dairy of its size to have such a short collection route, it is less than 5 hours! This speed has earned the cooperative distinctive recognition like the Label Rouge which has very strict specifications. |
